A tender, flavorful bundt cake made with reduced apple cider and a cinnamon swirl, perfect for fall gatherings. This healthier version uses whole wheat pastry flour and coconut sugar for a guilt-free indulgence.

  • ⅓ cup coconut sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 2 tablespoons melted butter (for swirl)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons apple cider (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Reduce the apple cider: Pour 1 ½ cups apple cider into a small saucepan. Simmer over medium heat for 10-12 minutes until reduced to about ¾ cup. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 10-cup bundt pan thoroughly and dust with flour.
  3. In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a separate large bowl, beat softened butter and coconut sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. With mixer on low, add dry ingredients and reduced apple cider alternately, starting and ending with flour. Mix just until combined. Fold in Greek yogurt gently.
  7. Make the cinnamon swirl: In a small bowl, mix coconut sugar, cinnamon, and melted butter until crumbly.
  8. Spoon half the batter into the prepared pan. Sprinkle cinnamon swirl mixture over batter, avoiding edges. Top with remaining batter and smooth.
  9. Bake for 45-55 minutes until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack for exactly 15 minutes, then invert onto rack to cool completely.
  10. Make the glaze: Whisk powdered sugar, 2 tablespoons apple cider, and vanilla extract until smooth. Drizzle over cooled cake.

Reduce apple cider for concentrated flavor. Use room temperature ingredients for best texture. Let cake cool completely before glazing. Can be made dairy-free or gluten-free with substitutions.
