The Best Smoky Chipotle Beef Chili Recipe (One-Pot)

A rich, smoky chipotle beef chili that tastes like it simmered all day but comes together in one pot in under an hour. Perfect for busy weeknights or game day gatherings.

  • 2 tablespoons olive oil
  • 2 pounds ground beef (80/20 blend)
  • 1 large yellow onion, diced (about 2 cups)
  • 4 cloves garlic, minced
  • 1 large red bell pepper, diced
  • 23 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth (low-sodium recommended)
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • Shredded cheddar cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Diced avocado (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the ground beef and let it brown without stirring too much for 5-6 minutes.
  2. Add the onion and bell pepper to the pot. Cook for 4-5 minutes, stirring occasionally, until softened.
  3. Stir in the minced garlic, chipotle peppers, and adobo sauce. Cook for 1 minute until fragrant.
  4. Add the tomato paste and all the spices (chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper). Stir and cook for 2 minutes to bloom the spices.
  5. Pour in the fire-roasted tomatoes, tomato sauce, and beef broth. Stir well, scraping the bottom of the pot to release browned bits.
  6. Bring the chili to a boil, then reduce heat to low. Simmer uncovered for 20 minutes, stirring occasionally.
  7. Stir in the kidney beans and black beans. Simmer for another 10 minutes until heated through and chili is thick.
  8. Taste and adjust seasonings, adding more salt or a squeeze of lime juice if desired.
  9. Remove from heat and let rest for 5 minutes before serving. Serve hot with desired toppings.

Notes

For a milder chili, use 1 chipotle pepper and skip the adobo sauce and cayenne. For extra smokiness, add 1-2 strips of diced bacon when cooking the onion. This chili tastes even better the next day and freezes well for up to 3 months.
