This spooky spiderweb taco dip is a quick and easy Halloween party recipe that combines seasoned beef, creamy refried beans, cool sour cream, and melted cheese in a showstopping spiderweb design. It’s the same delicious layered dip you love, dressed up in its creepiest costume.

Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning (such as Old El Paso)
  • 1 can (16 ounces) refried beans
  • 4 ounces cream cheese, softened
  • 1/2 cup salsa
  • 1 1/2 cups sour cream (full fat recommended)
  • 1/4 cup mayonnaise
  • 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack)
  • 1 can black olives, sliced
  • 1/2 cup diced tomatoes (fresh or canned, drained well)
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • Tortilla chips for serving (scoop-shaped recommended)
  • 8 whole black olives (for spider decorations)
  • Sour cream for spider eyes

Instructions

  1. Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook for 6 to 8 minutes until browned and no pink remains. Drain excess fat. Add taco seasoning and 1/4 cup water. Stir and simmer for 2 minutes until thickened. Set aside to cool slightly.
  2. Make the bean layer: In a medium mixing bowl, combine refried beans, softened cream cheese, and salsa. Stir until completely smooth.
  3. Prepare the sour cream web mixture: In a small bowl, combine 1 cup of sour cream with mayonnaise. Stir until smooth. Reserve remaining 1/2 cup sour cream for spider eyes and touch-ups.
  4. Assemble the base layers: Spread the bean mixture onto a serving platter in an even circle about 10 inches wide and 1/2 inch thick. Spread the seasoned beef over the bean layer, leaving about a 1-inch border of beans showing around the edge.
  5. Add the cheese layer: Sprinkle shredded Mexican blend cheese evenly over the beef layer in a generous single layer.
  6. Pipe the spiderweb: Spoon sour cream mixture into a piping bag or zip-top bag with a tiny corner snipped off. Starting from the center, pipe a small circle, then larger concentric circles about an inch apart until you reach the edge (4 to 5 circles). Using a toothpick or knife, gently drag from the center outward through all circles to create web lines. Repeat 8 times around the dip, wiping the toothpick clean between each pull.
  7. Make the spiders: Slice whole black olives in half lengthwise. Use one half as the spider body. Cut the other half into thin strips for 8 legs per spider. Arrange legs on the dip, place body on top, and add tiny dots of sour cream for eyes. Place 3 to 4 spiders on the web.
  8. Add finishing touches: Sprinkle diced tomatoes, sliced black olives, green onions, and fresh cilantro around the edges of the dip, keeping them off the web pattern if possible.
  9. Chill before serving: Refrigerate for at least 30 minutes before serving. Can be made up to 24 hours ahead; add fresh toppings right before serving.

Notes

Let cream cheese sit out for at least 30 minutes before starting to avoid lumps. Drain tomatoes well to prevent watery dip. Use full-fat sour cream and cream cheese for best texture. The mayonnaise in the sour cream mixture stabilizes the web pattern. Let beef cool before adding cheese to prevent greasy melting. Practice piping the web on a plate first. Keep dip cold for best web hold. For a vegetarian version, skip beef and use a second can of refried beans or mashed black beans with sauteed mushrooms.
