These spooky black cat peanut butter cookie sandwiches are quick, easy, and perfect for Halloween. Made with black cocoa powder and a creamy peanut butter filling, they’re a crowd-pleaser that comes together in under 45 minutes.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/4 cup black cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar (sifted if lumpy)
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup white chocolate chips or melting wafers
  • 1/2 teaspoon coconut oil or vegetable shortening
  • Optional: black sanding sugar or edible glitter

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine 1 cup creamy peanut butter and 1 cup granulated sugar. Mix until smooth. Add 1 large egg and 1 teaspoon vanilla extract; mix until cohesive.
  3. In a separate small bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking soda, 1/4 cup black cocoa powder, and 1/4 teaspoon salt. Add to wet mixture and stir until just combined. Do not overmix.
  4. Cover bowl with plastic wrap and chill dough in the refrigerator for 10 minutes.
  5. Scoop about 1.5 tablespoons of dough and roll into a ball. Roll in granulated sugar. Place on prepared baking sheets, 2 inches apart.
  6. Using a fork, flatten each ball in a crisscross pattern. Use a paring knife to shape the top of each cookie into two small triangles for cat ears.
  7. Bake for 10-12 minutes, until puffed and slightly cracked. Cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  8. While cookies cool, make filling: In a medium bowl, beat together 1/2 cup peanut butter and 2 tablespoons softened butter until smooth. Add 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and 2 tablespoons milk. Beat until smooth. Add more milk if too thick, more powdered sugar if too thin.
  9. Pair cookies by size. Spread about 1 tablespoon of filling on the flat side of one cookie, then top with another cookie, flat side down. Press gently.
  10. Melt white chocolate chips with 1/2 teaspoon coconut oil in the microwave in 15-second intervals, stirring between each, until smooth. Transfer to a piping bag or zip-top bag with a tiny corner snipped off. Pipe two dots for eyes and three whiskers on each side. Let set for about 10 minutes before serving.

Notes

Chill the dough for 10 minutes to prevent spreading. Use black cocoa powder for the spooky black color. Let cookies cool completely before assembling to prevent filling from melting. White chocolate decorations should set fully before stacking.
