  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon Dijon mustard
  • 2 large eggs, room temperature
  • ¾ cup (180ml) milk (whole or 2%)
  • ⅓ cup (80ml) vegetable oil or melted butter
  • 1 cup (150g) cooked ham, diced
  • 1 cup (90g) broccoli florets, steamed and chopped finely
  • 1 cup (100g) sharp cheddar cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your muffin tin or line it with paper liners to prevent sticking.
  2. Steam the broccoli florets until just tender, about 3 to 4 minutes. Drain and chop finely.
  3. In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  4. In a separate bowl, beat the eggs, then whisk in the milk, vegetable oil or melted butter, and Dijon mustard until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  6. Fold in the diced ham, chopped broccoli, and shredded cheddar cheese.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about ¾ full.
  8. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes
