  • 2 tablespoons bourbon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment for easy cleanup and set the wire rack on top.
  2. Prepare the glaze: In a small bowl, whisk together 1/4 cup pure maple syrup, 2 tablespoons bourbon, 1 teaspoon Dijon mustard, 1/2 teaspoon smoked paprika, and a few cracks of black pepper until smooth.
  3. Arrange the bacon slices: Lay the 12 slices of thick-cut bacon in a single layer on the wire rack, making sure they don’t overlap.
  4. Brush the first layer of glaze: Using a pastry brush or spoon, lightly coat each bacon slice with the bourbon maple glaze.
  5. Bake for 15 minutes, watching closely so the edges start to crisp but do not burn.
  6. Carefully flip each bacon strip using tongs and brush the other side with glaze. Return to oven.
  7. Bake for another 10-15 minutes until the bacon is crisp and caramelized to your liking.
  8. Remove from oven and let cool on a wire rack or paper towel-lined plate to drain excess grease and allow glaze to thicken.
  9. Serve warm or at room temperature.
