A light, thirst-quenching, and fizzy summer slushie made with fresh watermelon, lemon juice, and sparkling water. Perfect for parties and hot days.

Ingredients

  • 4 cups fresh seedless watermelon cubes, chilled
  • 1/2 cup fresh lemon juice (about 3 large lemons)
  • 1 to 1 1/2 cups sparkling water, chilled
  • 2 tablespoons honey or agave syrup (optional)
  • 2 cups ice cubes, crushed or whole
  • Fresh mint leaves (small handful, optional, for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Cut approximately 4 cups of seedless watermelon into cubes and chill well.
  2. Roll lemons on the counter, cut, and juice to get about 1/2 cup fresh lemon juice. Strain out seeds.
  3. Add watermelon cubes and 2 cups of ice to a high-speed blender. Pulse a few times to break down ice, then blend on high until smooth slushie consistency is achieved.
  4. Pour in fresh lemon juice and 2 tablespoons honey or agave syrup (adjust sweetness to taste). Blend briefly to combine.
  5. Transfer the watermelon lemon slushie to a large pitcher. Slowly stir in 1 to 1 1/2 cups chilled sparkling water to maintain fizz. Do not blend.
  6. Serve immediately in glasses garnished with fresh mint leaves and lemon slices.

Notes

Use fresh lemon juice for best flavor. Chill watermelon cubes well or freeze overnight for frostier texture. Stir sparkling water gently to preserve bubbles. Adjust ice quantity for desired slushie thickness. Prepare base ahead and add sparkling water just before serving to keep fizz.
