A quick and easy homemade summer drink blending frozen strawberries and fresh lemon juice into a perfectly balanced, icy slushie that refreshes and delights.

Ingredients

Scale
  • 3 cups frozen strawberries (about 10.5 oz)
  • 1 cup fresh lemon juice (8 fl oz)
  • 1/2 cup simple syrup (4 fl oz)
  • 1 cup cold water (8 fl oz)
  • 2 cups ice cubes (about 10.5 oz)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the simple syrup by dissolving 1/2 cup granulated sugar in 1/2 cup water over gentle heat. Let cool to room temperature.
  2. Juice lemons to yield 1 cup fresh lemon juice. Strain if desired.
  3. In a blender, combine frozen strawberries, fresh lemon juice, simple syrup, cold water, and ice cubes.
  4. Blend on high speed for 45-60 seconds until smooth and slushy.
  5. Taste and adjust sweetness or tartness by adding more simple syrup or lemon juice as needed.
  6. Serve immediately in chilled glasses, garnished with fresh mint leaves if using.

Notes

Use frozen strawberries as natural ice cubes to avoid watery dilution. Prepare simple syrup ahead for smooth sweetness. Pulse blender if it struggles with ice. Adjust sweetness and tartness to taste. Store leftovers in airtight container in freezer up to 24 hours; thaw slightly and re-blend before serving.
