Refreshing Blue Lagoon Lemonade Mocktail

A bright, tangy, and visually stunning non-alcoholic mocktail combining fresh lemon juice, blue curaçao syrup, simple syrup, and sparkling water. Perfect for summer parties and easy to make in under 10 minutes.

  • 4 large fresh lemons, juiced (about 1 cup or 240ml lemon juice)
  • ½ cup (120ml) blue curaçao syrup (non-alcoholic)
  • ½ cup (120ml) simple syrup, homemade or store-bought
  • 3 cups (720ml) sparkling water, chilled
  • Ice cubes, plenty
  • A handful of fresh mint leaves, for garnish
  • Lemon slices, for garnish (optional)

Instructions

  1. Roll the lemons on the countertop to loosen the juice. Cut in half and juice until you have about 1 cup (240ml) of fresh lemon juice. Strain if you want a pulp-free drink.
  2. If making simple syrup at home: combine ½ cup sugar and ½ cup water in a small saucepan. Heat gently, stirring until sugar dissolves. Cool before using.
  3. In a pitcher, combine the fresh lemon juice, blue curaçao syrup, and simple syrup. Stir gently to blend the flavors smoothly.
  4. Pour in 3 cups (720ml) of chilled sparkling water. Stir carefully to mix without losing too much fizz.
  5. Fill each glass generously with ice cubes. Pour the mocktail over the ice.
  6. Garnish each glass with a slice of lemon and a sprig of fresh mint. Serve immediately.

Notes

If blue curaçao syrup is very sweet, reduce the amount of simple syrup to taste. Add sparkling water last and stir gently to preserve fizz. Keep the lemon and syrup mixture refrigerated for up to 24 hours and add sparkling water just before serving. For a lower-sugar version, reduce simple syrup or substitute with agave nectar. Fresh lemon juice is best for brightness. Clap mint leaves before garnishing to release oils.
