  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp garlic powder
  • 1 tsp Worcestershire sauce (optional)
  • 4 burger buns, lightly toasted
  • 4 slices cheddar cheese or favorite melting cheese
  • Lettuce leaves, tomato slices, and pickles for topping
  • Ketchup, mustard, and mayo for serving
  • 3 large russet potatoes, washed and cut into ¼-inch sticks
  • 2 tbsp vegetable oil or canola oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt to taste
  • Freshly ground black pepper, a pinch

Instructions

  1. Preheat oven to 425°F (220°C). Peel potatoes if desired, then cut into ¼-inch sticks. Soak fries in cold water for at least 5 minutes to remove excess starch.
  2. Drain and pat fries dry thoroughly. Toss fries with vegetable oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread fries in a single layer on a baking sheet.
  3. Bake fries for 10 minutes, then flip or shake fries and bake another 10 minutes until golden and crispy. Watch closely in the last 5 minutes to avoid burning.
  4. While fries bake, place ground beef in a bowl. Add salt, pepper, garlic powder, and Worcestershire sauce. Mix gently without overworking. Divide into 4 equal portions and form patties about ¾ inch thick with a small indentation in the center.
  5. Heat skillet over medium-high heat until hot but not smoking. Cook patties 3-4 minutes on first side without moving. Flip and cook another 3 minutes for medium doneness. Add cheese slices in last minute and cover to melt cheese.
  6. Toast buns lightly while burgers rest for a minute. Assemble burgers with lettuce, tomato, pickles, condiments, and patties.
  7. Serve burgers with crispy fries immediately.

Notes

Soak fries in cold water to remove starch for crispiness. Avoid overcrowding fries on baking sheet. Do not press burger patties while cooking to keep them juicy. Toast buns lightly to prevent sogginess. For crispier fries, increase oven temperature slightly or finish under broiler briefly.
