  • 3 cups broccoli florets (fresh or frozen, thawed)
  • 4 large garlic cloves, minced
  • 3 tablespoons honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 2 tablespoons vegetable oil
  • 2 stalks green onions, sliced
  • Pinch of red pepper flakes (optional)

Instructions

  1. Mince the garlic, slice the green onions, and cut broccoli into bite-sized florets if not pre-cut. Prepare the cornstarch slurry by mixing 1 tablespoon cornstarch with 2 tablespoons cold water. (About 5 minutes prep)
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add broccoli and stir-fry for 3-4 minutes until bright green and just tender but still crisp. Remove broccoli and set aside.
  3. In the same skillet, add remaining 1 tablespoon vegetable oil. Add ground beef, breaking it apart with a spatula. Cook for 5-6 minutes until browned and cooked through, stirring often. Drain excess fat if necessary.
  4. Lower heat to medium. Add minced garlic to the beef and sauté for 30 seconds until fragrant, being careful not to burn it.
  5. Stir in honey, soy sauce, rice vinegar, and sesame oil. Mix well.
  6. Slowly pour in the cornstarch slurry while stirring constantly. Cook for 1-2 minutes until the sauce thickens and becomes glossy. Add a splash of water if sauce becomes too thick.
  7. Return broccoli to the skillet and toss to coat evenly with the honey garlic beef mixture. Cook for an additional minute to reheat the broccoli.
  8. Remove from heat and garnish with sliced green onions and a pinch of red pepper flakes if desired. Serve immediately over steamed rice or noodles.

Notes

Do not overcrowd the pan when browning beef to avoid steaming. Add garlic after beef is browned to prevent burning. Use cornstarch slurry to thicken sauce for a sticky glaze. For crisp-tender broccoli, stir-fry quickly at high heat. Frozen broccoli should be thawed and optionally parboiled for 1 minute before stir-frying. Optional garnishes include toasted sesame seeds, crushed peanuts, or fresh cilantro.
