A quick and easy refrigerator pickle recipe featuring fresh cucumbers and dill, ready in just a few hours with no cooking required. Perfect for adding a bright, tangy crunch to sandwiches, salads, and snacks.

  • 4 cups sliced Kirby or Persian cucumbers (firm, small cucumbers work best for crunch)
  • 45 sprigs fresh dill (or 2 teaspoons dried dill)
  • 3 cloves garlic, smashed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon whole black peppercorns
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and dry cucumbers thoroughly. Slice into 1/4-inch (about 6 mm) thick rounds or cut lengthwise into quarters for spears.
  2. In a mixing bowl, combine 1 cup white vinegar, 1 cup water, 2 tablespoons granulated sugar, and 1 tablespoon kosher salt. Stir until sugar and salt dissolve, about 2 minutes. Warm liquid slightly if needed.
  3. Add 3 smashed garlic cloves, 4-5 fresh dill sprigs, 1 teaspoon whole black peppercorns, and optional 1/4 teaspoon red pepper flakes. Stir gently to combine.
  4. Place cucumber slices into a clean glass jar or airtight container. Press down gently to fit as many as possible without crushing, leaving about 1 inch of headspace.
  5. Pour the brine mixture over the cucumbers, fully submerging them. Use a spoon or small weight to keep cucumbers under the liquid if needed.
  6. Seal the jar tightly and shake gently to distribute spices. Refrigerate for at least 4 hours, preferably 8-12 hours for full flavor.
  7. Serve chilled directly from the jar. Pickles keep fresh in the refrigerator for up to 2 weeks.

Notes

Use firm cucumbers like Kirby or Persian for best crunch. Smash garlic cloves to release more flavor. Keep cucumbers fully submerged in brine to avoid spoilage. Refrigerate at least 4 hours, but overnight chilling improves flavor and texture. Pickles last up to 2 weeks refrigerated, best within the first week. Cloudy brine after a day or two is normal and safe.
