Instructions

  1. Chill the champagne in the fridge for at least 3 hours before serving, ideally between 45°F and 50°F (7°C to 10°C). Alternatively, chill in an ice bucket with half ice and half water for 20 minutes.
  2. Slice artisan bread and toast in a toaster or on a grill pan over medium heat until golden and slightly crisp, about 3-4 minutes per side.
  3. For scrambled eggs: whisk eggs with a pinch of salt and pepper. Heat butter in a non-stick skillet over medium-low heat. Pour in eggs and stir gently until soft curds form but eggs remain creamy, about 5 minutes. For poached eggs: bring water to a gentle simmer, add a splash of vinegar, crack eggs in, and cook 3-4 minutes until whites are set but yolks runny.
  4. Prepare toppings by thinly slicing avocado and smoked salmon, and finely chopping fresh herbs. Spread cream cheese or crème fraîche on toast if using.
  5. Assemble by layering toast with cream cheese (optional), avocado slices, smoked salmon, and herbs. Add freshly cracked black pepper and drizzle honey or maple syrup if desired.
