  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 large egg, room temperature
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (60ml) vegetable oil
  • 1 teaspoon vanilla extract
  • ¾ cup grated zucchini (about 1 medium zucchini)
  • ½ cup (60g) chopped walnuts, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease exposed ends.
  2. Wash zucchini, trim stem, and grate using large holes of a box grater until you have ¾ cup loosely packed. Do not squeeze out moisture.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, whisk together egg, brown sugar, oil, and vanilla until smooth and slightly lighter in color.
  5. Pour dry ingredients into wet ingredients. Fold gently with a wooden spoon or rubber spatula until just combined (a few lumps are fine).
  6. Fold in grated zucchini and chopped walnuts until evenly distributed.
  7. Scrape batter into prepared loaf pan and spread evenly. Bake for 50-55 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Cool in pan on a wire rack for 10 minutes, then lift out using parchment handles and cool completely on rack (at least 1 hour) before slicing.

Notes

Do not squeeze the moisture out of the zucchini—it’s essential for a moist crumb. Toast walnuts for deeper flavor. Let bread cool completely before slicing to prevent crumbling. Bread tastes even better the next day.
