Perfect Firework Explosion Cake Pops

These festive cake pops are quick and easy to make, featuring a moist cake center coated in crisp white chocolate with a surprise popping candy explosion inside. Perfect for celebrations and last-minute party treats.

Ingredients

  • 1 box yellow or white cake mix (about 15.25 oz / 432 g)
  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil (120 ml)
  • 1 cup water (240 ml)
  • 1/2 cup unsalted butter, softened (113 g)
  • 1 1/2 cups powdered sugar (180 g)
  • 1 tsp vanilla extract (5 ml)
  • 2 tbsp milk (30 ml), plus extra as needed
  • 12 oz white chocolate or candy melts (340 g)
  • 1/2 cup colorful sprinkles (75 g)
  • 1/4 cup popping candy (25 g)
  • 2025 lollipop sticks

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. In a large bowl, combine cake mix, eggs, vegetable oil, and water. Mix on medium speed for 2 minutes until smooth. If batter is too runny, add 1 tablespoon flour to thicken.
  3. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cake cool completely on a wire rack (about 45 minutes).
  4. While cake cools, beat softened butter until creamy. Gradually add powdered sugar, vanilla extract, and milk, mixing until smooth. Adjust milk for desired frosting consistency.
  5. Crumble cooled cake into fine crumbs in a large bowl.
  6. Add 1/3 cup (about 80 g) frosting to cake crumbs and mix gently until mixture holds together. Add more frosting if needed but avoid making it sticky.
  7. Scoop about 1.5 tablespoons (20 g) of mixture and roll into balls. Place on a parchment-lined baking sheet. Chill in fridge for at least 1 hour.
  8. Melt a small amount of white chocolate. Dip tip of each lollipop stick into melted chocolate and insert halfway into each cake ball. Return to fridge for 15 minutes to set.
  9. Melt remaining white chocolate or candy melts in microwave-safe bowl in 30-second intervals, stirring until smooth.
  10. Dip each cake pop into melted chocolate, tapping off excess. Immediately sprinkle with colorful sprinkles and gently press popping candy onto wet chocolate.
  11. Place cake pops upright in foam block or cake pop stand. Let sit at room temperature until coating hardens (about 30 minutes). Avoid refrigeration at this stage if kitchen is humid.

Notes

Chilling cake balls is essential to prevent crumbling during dipping. Melt chocolate slowly in short bursts to avoid seizing. Dip stick tips in chocolate before inserting to secure sticks. Add popping candy immediately after dipping before chocolate sets.
