Ingredients

Scale
  • 2 ribeye or sirloin steaks (about 8 oz / 225 g each), well-marbled for juiciness
  • 2 tbsp olive oil (extra virgin for best flavor)
  • 3 garlic cloves, minced
  • 1 tsp fresh rosemary, finely chopped (or ½ tsp dried)
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 1 tsp coarse sea salt (Maldon preferred)
  • ½ tsp freshly ground black pepper
  • 1 tbsp balsamic vinegar
  • 1 medium zucchini, sliced lengthwise
  • 1 red bell pepper, cut into strips
  • 8 oz (225 g) cremini mushrooms, cleaned
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 tbsp unsalted butter, softened
  • 1 garlic clove, minced
  • 1 tsp fresh parsley, chopped
  • Pinch of salt

Instructions

  1. Marinate the Steaks (10 minutes + optional overnight): In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, pepper, and balsamic vinegar. Rub this marinade generously over both sides of the steaks. Cover and let rest at room temperature for 10 minutes or refrigerate overnight for deeper flavor. If marinating overnight, bring steaks back to room temperature before grilling.
  2. Prepare Vegetables (5 minutes): Toss zucchini slices, red bell pepper strips, and mushrooms with olive oil, salt, and pepper. Set aside until ready to grill.
  3. Preheat the Grill (10 minutes): Light your grill and heat it to medium-high (about 450°F / 230°C). If using charcoal, wait until coals are covered with white ash.
  4. Grill the Steaks (8-12 minutes): Place steaks on the grill. Cook for about 4-6 minutes per side for medium rare, depending on thickness. Use tongs to flip once – don’t poke holes! Check internal temperature with a meat thermometer: 130°F (54°C) for medium rare, 140°F (60°C) for medium. Remember, the steak will continue to cook a bit after you take it off.
  5. Grill the Vegetables (6-8 minutes): While steaks rest, place veggies on the grill. Turn occasionally until tender and slightly charred. Zucchini and bell peppers will soften but still have some bite.
  6. Make Garlic Herb Butter (5 minutes): In a small bowl, combine softened butter, minced garlic, parsley, and a pinch of salt. Mix well.
  7. Rest the Steaks (5 minutes): Remove steaks from grill and tent loosely with foil. Resting lets juices redistribute for maximum juiciness.
  8. Serve: Top each steak with a dollop of garlic herb butter, plate alongside grilled vegetables, and enjoy your perfect date night meal!

Notes

If you forget to marinate the steaks ahead of time, rub with salt and pepper and grill as usual. Use a meat thermometer for best results or the finger test method if you prefer. Rest steaks under foil to keep juices locked in. For dairy-free, skip the garlic herb butter or use a plant-based spread. Grill basket recommended for small vegetables to prevent falling through grates.
