This moist, tender pumpkin sourdough discard bread is the perfect way to use up your starter discard. It’s quick, easy, and packed with warm fall spices, making it an ideal treat for cozy mornings or holiday gatherings.

  • 1 cup (245g) pumpkin puree (not pumpkin pie filling)
  • 1 cup (240g) sourdough discard (unfed, cold)
  • 2 cups (260g) all-purpose flour
  • ½ cup (100g) brown sugar (packed, light or dark)
  • ¼ cup (57g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¼ cup (30g) pumpkin seeds (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, whisk together the pumpkin puree, sourdough discard, melted butter, brown sugar, and eggs until smooth and uniform in color.
  3. In a separate medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, and salt.
  4. Pour the dry ingredients into the wet ingredients. Fold with a rubber spatula until just combined (a few lumps are okay; do not overmix).
  5. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle pumpkin seeds on top if using, pressing them in gently.
  6. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  7. Let the bread cool in the pan on a wire rack for 15 minutes, then lift out using the parchment paper and cool completely on the rack before slicing.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. The bread tastes even better on day two as flavors meld. To freeze, wrap tightly in plastic wrap and foil for up to 3 months.
