These sliders are the perfect fusion of creamy, spicy Buffalo chicken dip and handheld stuffed sliders. They are quick, easy, and a guaranteed crowd-pleaser for game day.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup Buffalo wing sauce (like Frank’s RedHot)
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions
  • 12 slider buns (Hawaiian sweet rolls recommended)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon everything bagel seasoning (optional)
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine softened cream cheese, Buffalo wing sauce, and ranch or blue cheese dressing. Use a hand mixer on low speed until smooth and creamy, about 1 minute.
  3. Fold in shredded chicken, 1 cup shredded cheddar cheese, crumbled blue cheese (if using), and chopped green onions. Mix until evenly coated.
  4. Slice the pack of slider buns in half horizontally, keeping them connected. Place the bottom half in the prepared baking dish. Spread the Buffalo chicken filling evenly over the bottom buns.
  5. Place the top half of the buns over the filling. In a small bowl, mix melted butter with everything bagel seasoning. Brush this mixture over the tops of the buns. Sprinkle the remaining 1/2 cup mozzarella cheese over the top.
  6. Cover the dish loosely with aluminum foil. Bake for 10 minutes.
  7. Remove foil and bake for another 5-7 minutes, until tops are golden brown and cheese is bubbly. Internal temperature of filling should be at least 165°F (74°C).
  8. Let sliders rest for 5 minutes before serving. Garnish with fresh parsley or chives.

Notes

Make sure cream cheese is fully softened to avoid lumps. Cover with foil for the first 10 minutes to prevent burning. For a less spicy version, use mild wing sauce or mix with extra ranch. For a dairy-free option, use dairy-free cream cheese and plant-based ranch. For a vegetarian option, substitute chicken with shredded jackfruit or mashed chickpeas.
