A quick and easy brunch grazing board featuring creamy whipped brie, fresh strawberries, crunchy nuts, and crisp crackers, perfect for casual gatherings or special occasions.

Ingredients

Scale
  • 8 ounces whipped brie cheese (or regular brie whipped with a splash of heavy cream)
  • 1 pint fresh strawberries (about 450g), washed and hulled
  • 2 tablespoons honey, for drizzling
  • 2 cups assorted crackers (about 60g), sturdy varieties like water crackers or multigrain
  • ½ cup toasted chopped walnuts or pecans (about 60g)
  • Fresh herbs (optional, such as thyme or mint) for garnish
  • Lemon zest from one lemon
  • Optional: sliced cured meats like prosciutto or salami

Instructions

  1. Prepare the whipped brie: If using store-bought whipped brie, transfer it to a mixing bowl. If using regular brie, cut off the rind and place the cheese in a bowl with 2 tablespoons of heavy cream. Whip with a hand mixer on medium speed for about 3-4 minutes until fluffy and smooth. (Tip: The cheese should be at room temperature for easier whipping.)
  2. Wash and prep strawberries: Rinse the strawberries under cold water, pat dry, and hull them by removing the green tops. Slice larger berries in halves or quarters to make them easier to pick up. (Note: Dry fruit won’t dilute the cheese or crackers.)
  3. Toast the nuts: In a dry skillet over medium heat, toast chopped walnuts or pecans for 3-5 minutes, stirring frequently until fragrant and slightly browned. Remove promptly to avoid burning.
  4. Arrange the board: On your serving board, spread the whipped brie in a generous mound or in small dollops if you prefer. Scatter the strawberries around the cheese, then place crackers in small piles on opposite sides. Add the toasted nuts in a small bowl or sprinkle them around the board.
  5. Add finishing touches: Drizzle honey over the whipped brie and berries. Sprinkle lemon zest over the cheese for brightness, and garnish with fresh thyme or mint leaves. If you like, tuck slices of prosciutto or salami alongside for an extra savory note.
  6. Serve immediately: The board is best enjoyed fresh, so invite your guests to grab a cracker, load it with cheese and berries, and savor the mix of textures and flavors.

Notes

Room temperature brie whips best; remove rind before whipping for smooth texture. Toast nuts carefully to avoid burning. Use sturdy crackers to hold toppings without breaking. Prepare nuts and wash fruit a day ahead if desired, but assemble just before serving to keep crackers crisp. For dairy-free, substitute whipped brie with whipped cashew or coconut-based cheese. Lemon zest is optional but adds brightness.
