  • 8 slices thick-cut bacon
  • ½ cup (75 g) crumbled blue cheese (Roquefort or Gorgonzola recommended)
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh thyme, finely chopped
  • Freshly ground black pepper, to taste
  • Salt, to taste (kosher or sea salt preferred)
  • 1 tablespoon olive oil (extra virgin preferred)
  • ½ teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Let steaks come to room temperature for about 15 minutes.
  2. In a small bowl, combine crumbled blue cheese, mayonnaise, chopped thyme, and garlic powder (if using). Mix well and set aside.
  3. Wrap each filet with two slices of bacon, overlapping slightly. Secure with toothpicks if needed. Season steaks with salt and freshly ground black pepper on all sides.
  4. Heat olive oil in a cast iron skillet over medium-high heat until shimmering. Sear the bacon-wrapped filets for 2-3 minutes per side until golden brown and bacon is crisping.
  5. Transfer the skillet or move filets to an oven-safe dish. Spread the blue cheese mixture generously on top of each steak.
  6. Bake in the preheated oven for 6-8 minutes. Use a meat thermometer to check doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  7. Remove from oven, tent loosely with foil, and let rest for 5 minutes to redistribute juices.
  8. Serve immediately, removing any toothpicks before plating.

If bacon isn’t crisping enough during searing, broil for 1-2 minutes after baking to add crunch. Prepping the blue cheese crust and wrapping filets a day ahead can save time. Use a meat thermometer to ensure perfect doneness. Rest the meat for 5 minutes after baking to keep it juicy. For dairy-free, substitute blue cheese and mayo with vegan cheese spread and coconut yogurt. This recipe is naturally gluten-free but verify mayo brand if needed.
