This One-Pot Creamy Garlic Parmesan Chicken Pasta is a quick and easy 30-minute meal that comes together in one pot with simple ingredients. Perfect for busy weeknights, it features tender chicken, al dente pasta, and a velvety garlic Parmesan sauce that tastes like you spent hours on it.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound total), cut into bite-sized pieces
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 8 ounces dried pasta (penne, rigatoni, or farfalle)
  • 1 cup freshly grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan for serving

Instructions

  1. Prep your ingredients: Dice chicken into 1-inch cubes, season with salt and pepper. Mince garlic, grate Parmesan, measure broth and cream.
  2. Sear the chicken: Heat olive oil in a large Dutch oven over medium-high heat. Add chicken in a single layer and cook 3-4 minutes without moving until golden brown. Flip and cook 2-3 more minutes. Transfer to a plate.
  3. Build the base: Reduce heat to medium, add butter. Scrape up browned bits from bottom. Add minced garlic and red pepper flakes (if using), cook 30-60 seconds stirring constantly.
  4. Add liquids and pasta: Pour in chicken broth and heavy cream, add Italian seasoning. Stir, scraping up any remaining bits. Add dried pasta, submerging it. Bring to a boil, then reduce to a gentle simmer.
  5. Cook the pasta: Simmer uncovered for 10-12 minutes, stirring every 2-3 minutes to prevent sticking. Cook until pasta is al dente. Add splash of broth if too dry.
  6. Add chicken and cheese: Return seared chicken and any juices to pot. Stir in grated Parmesan until melted and creamy. Taste and adjust seasoning.
  7. Rest and serve: Remove from heat, let rest 2-3 minutes. Garnish with parsley and extra Parmesan. Serve hot.

Notes

Don’t skip searing the chicken—it builds flavor. Keep heat gentle when simmering cream to prevent curdling. Stir pasta every 2-3 minutes to avoid sticking. Grate your own Parmesan for smooth melting. Leftovers can be refrigerated for up to 4 days; add a splash of milk when reheating.
