  • 1 pound raw large shrimp, peeled and deveined (2125 count per pound)
  • 1/3 cup honey (110 grams)
  • 3 tablespoons low-sodium soy sauce (45 ml)
  • 4 cloves garlic, minced (about 2 teaspoons)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 1 teaspoon fresh ginger, grated (2 grams, optional)
  • 810 wooden skewers, soaked in water for 20 minutes
  • Green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Soak wooden skewers in water for at least 20 minutes. If using metal skewers, skip this step.
  2. Make the honey garlic sauce by whisking together honey, soy sauce, minced garlic, olive oil, rice vinegar, and grated ginger in a medium bowl. Set aside about 2 tablespoons of the sauce for basting later.
  3. Prep the shrimp by patting them dry with paper towels. If frozen, ensure they are fully thawed and drained.
  4. Toss the shrimp in the bowl with the larger portion of sauce. Use your hands or a spatula to coat evenly. Let sit for 5 minutes while heating the grill. Do not marinate longer than 15 minutes.
  5. Thread the shrimp onto the skewers, pushing the skewer through the thickest part of each shrimp, about 4-5 shrimp per skewer. Leave a little space between each one.
  6. Preheat grill to medium-high heat, about 400°F (200°C). If using a grill pan, heat over medium-high heat for about 3 minutes.
  7. Lightly oil the grates using a paper towel dipped in oil and held with tongs.
  8. Grill the skewers for 2-3 minutes per side, until the edges turn pink and opaque. Total cooking time is about 4-6 minutes.
  9. Brush with reserved sauce during the last minute of cooking.
  10. Remove from the grill immediately when shrimp are pink and firm to the touch.
  11. Garnish with sliced green onions and serve right away.

Notes

Don’t overcook the shrimp; they are done when pink and curled into a C shape. Pat shrimp dry for better glaze adhesion. Use two skewers per row of shrimp to prevent spinning. Watch the sugar in the glaze to prevent burning. Make extra sauce for dipping. For gluten-free, use tamari or coconut aminos instead of soy sauce.
