  • 46 ounces deli turkey slices (oven-roasted or honey turkey)
  • 4 ounces cream cheese, softened to room temperature
  • ½ cup shredded cheddar cheese (sharp or mild)
  • 46 lettuce leaves (optional; romaine or iceberg for crunch)
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese: Remove cream cheese from fridge 20 minutes before starting, or microwave on low for 10 seconds until spreadable but not melted.
  2. Lay out a tortilla flat on a cutting board. If cold, microwave for 10 seconds to make more flexible.
  3. Spread a thin, even layer of cream cheese over the entire surface of the tortilla, going all the way to the edges. Season with a pinch of salt and pepper if desired.
  4. Place 3-4 slices of turkey evenly over the cream cheese, overlapping slightly to cover any bare spots.
  5. Sprinkle shredded cheddar evenly over the turkey. If using lettuce, lay 2-3 leaves on top and press gently to adhere.
  6. Starting from one edge, roll the tortilla tightly without tearing, using fingers to tuck and hold filling in place.
  7. Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Refrigerate for at least 15-20 minutes.
  8. Unwrap the chilled roll and place on a cutting board. Using a sharp serrated knife, slice into 1-inch thick rounds using a gentle sawing motion. Each tortilla yields 6-8 pinwheels.
  9. Optional: Secure each pinwheel with a toothpick to prevent unrolling in lunchboxes.
  10. Pack and serve immediately or store as directed.

Notes

Don’t skip the chilling step—it helps the pinwheels hold their shape. Use softened cream cheese to avoid tearing tortillas. For best texture, slice just before serving. Store unsliced rolls in the fridge for up to 3 days or freeze for up to 1 month.
