Peanut Butter Banana Overnight Oats - featured image

These creamy, naturally sweet overnight oats come together in just five minutes and are a hit with kids and adults alike. Made with simple pantry staples like rolled oats, peanut butter, and ripe bananas, they’re the perfect grab-and-go breakfast for busy mornings.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy, almond, oat, or soy)
  • ¼ cup (60g) peanut butter (creamy or crunchy)
  • 1 large ripe banana (about 120g mashed)
  • ¼ cup (60g) Greek yogurt (plain or vanilla)
  • 1–2 tablespoons (15-30ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon (2.5ml) vanilla extract
  • Pinch of salt (about ⅛ teaspoon)

Instructions

  1. Mash the ripe banana in a medium bowl or directly in your jar with a fork until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, Greek yogurt, honey (if using), and vanilla extract to the mashed banana. Stir or whisk until the peanut butter is fully incorporated. Alternatively, seal the jar and shake vigorously for 30 seconds.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir well until everything is combined. The mixture should look a little soupy.
  4. Divide the mixture evenly into two 16-ounce jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars and refrigerate for at least 4 hours, but overnight (8-12 hours) is best.
  6. In the morning, stir the oats well. Serve cold or warm (microwave for 45-60 seconds, stirring halfway). Top with sliced banana, a drizzle of peanut butter, or granola if desired.

Notes

For thicker oats, use ¾ cup milk instead of 1 cup. For a nut-free version, substitute peanut butter with sunflower seed butter or WowButter. These keep in the fridge for up to 4 days. Do not freeze.
