  • ¾ cup (150g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (150g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • ⅓ cup (75g) unsalted butter, melted
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a large bowl, whisk together 2 ½ cups all-purpose flour, ¾ cup granulated sugar, 1 tablespoon baking powder, and ½ teaspoon salt.
  3. Add 1 cup softened unsalted butter, 2 large eggs, and 1 teaspoon vanilla extract. Beat on medium speed until smooth and well combined, about 2-3 minutes. Batter should be thick but spreadable.
  4. In a small bowl, mix ¾ cup packed brown sugar, 2 tablespoons ground cinnamon, and ⅓ cup melted butter until spreadable. Set aside.
  5. In another bowl, beat 8 ounces softened cream cheese with ½ cup powdered sugar, 1 large egg yolk, and ½ teaspoon vanilla extract until smooth and creamy, about 2 minutes.
  6. Spread half of the bar base batter evenly into the prepared pan.
  7. Dollop half of the cheesecake mixture over the batter in spoonfuls, then spread half of the cinnamon swirl mixture over that.
  8. Repeat layers with remaining bar base, cheesecake, and cinnamon swirl mixtures.
  9. Use a butter knife or skewer to gently swirl the layers together, creating a marbled effect without overmixing.
  10. Bake for 35-40 minutes or until edges are golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  11. Remove from oven and cool completely on a wire rack.
  12. Cut into 12-16 bars and serve slightly warm or at room temperature.

Notes

Use softened butter and cream cheese for smooth mixing. Avoid overmixing the batter to keep bars tender. Swirl gently to maintain distinct layers. Oven temperatures vary; start checking at 30 minutes to prevent overbaking. Bars can be stored at room temperature for 2 days, refrigerated for up to a week, or frozen for 3 months.
