Ingredients

Scale
  • 2 large Granny Smith apples
  • 1 can (8 oz) refrigerated crescent roll dough
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon flaky sea salt, plus more for finishing
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel and core the apples. Cut each apple in half from top to bottom, then scoop out the core and seeds to create a hollow in each half.
  3. Unroll the crescent dough and separate into 8 triangles along the perforated lines. Gently press the perforations together to seal.
  4. In a small bowl, combine the granulated sugar, cinnamon, and nutmeg. Set aside about 2 tablespoons of this mixture for later.
  5. Place each apple half, cut side down, in the center of a crescent dough triangle. Sprinkle about 1 teaspoon of the cinnamon-sugar mixture into the hollow of each apple half. Fold the dough up around the apple, stretching gently to cover as much as possible, and pinch the seams to seal.
  6. Arrange the dumplings in the prepared baking dish, seam side down.
  7. Make the caramel sauce: In a small saucepan over medium heat, combine the brown sugar, heavy cream, and 3 tablespoons butter. Stir constantly until the butter is melted and the sugar has dissolved, about 3-4 minutes. Remove from heat and stir in the 1/2 teaspoon vanilla and 1/2 teaspoon flaky sea salt.
  8. Pour the caramel evenly over the wrapped apples. Then pour the remaining melted butter over the top. Sprinkle the reserved cinnamon-sugar mixture over everything.
  9. Bake for 30-35 minutes, or until the pastry is golden brown and the apples are tender when pierced with a fork. Halfway through baking, spoon some of the caramel from the bottom of the dish over the tops of the dumplings.
  10. Let them rest for about 5 minutes before serving.

Notes

Don’t overwork the dough. Watch the caramel carefully to prevent burning. Use a glass baking dish if possible to monitor caramel color. Baste the dumplings halfway through baking for a glossy finish. Let them rest 5 minutes before serving to allow the caramel to set slightly.
