  • 1 teaspoon vanilla extract (pure)
  • 1 1/2 cups whole wheat flour (white whole wheat or all-purpose)
  • 1 scoop vanilla protein powder (about 30 grams, whey or plant-based)
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp cloves)
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)
  • 1/4 cup chopped pecans or walnuts (optional, toasted)
  • 2 tablespoons chia seeds or flax seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. In a large bowl, whisk together the wet ingredients: pumpkin puree, Greek yogurt, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth and fully combined.
  3. In a medium bowl, stir together the dry ingredients: whole wheat flour, protein powder, coconut sugar, baking soda, baking powder, pumpkin pie spice, and salt. Use a fork to break up any clumps.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold gently until just combined—about 10 to 12 strokes. Do not overmix; lumpy batter is fine.
  5. Fold in optional mix-ins (chocolate chips, nuts, seeds) with 3 to 4 gentle folds.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Use a cookie scoop for even portions.
