Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 packet active dry yeast (about 2 1/4 teaspoons)
  • 1 cup warm water (110°F)
  • 2 tablespoons olive oil (plus extra for greasing)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 can (15 oz) crushed tomatoes (preferably San Marzano)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups shredded mozzarella cheese (low-moisture, whole milk)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pepperoni slices
  • 2 tablespoons olive oil (for brushing crust)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for 5-7 minutes until foamy.
  2. Make the dough: In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Stir until a shaggy dough forms. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  3. First rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled.
  4. Simmer the sauce: In a small saucepan, heat olive oil over medium heat. Add garlic and cook for 30 seconds. Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Bring to a simmer, then reduce heat to low and cook for 15-20 minutes, stirring occasionally, until thickened.
  5. Preheat your oven to 500°F (260°C). If using a pizza stone, place it on the bottom rack and preheat for at least 30 minutes.
  6. Shape the dough: Punch down the risen dough and turn onto a floured surface. Roll or stretch into a 12-inch circle. Transfer to your baking sheet or floured pizza peel.
  7. Assemble the base: Spread a thin layer of sauce over the dough, leaving a 1-inch border. Sprinkle mozzarella evenly, then Parmesan. Arrange pepperoni slices in a single layer.
  8. Create the spiderweb: Transfer remaining sauce to a piping bag or squeeze bottle. Pipe a small circle of sauce in the center, then larger circles around it, about an inch apart. Use a toothpick or skewer to drag from the center outward through all the circles, creating the web effect. Repeat 6-8 times.
  9. Bake: Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake for 10-14 minutes until the crust is golden brown and the cheese is bubbly.
  10. Rest and serve: Let the pizza cool for 3-5 minutes before slicing. Sprinkle with fresh basil if using. Cut into 8 slices.

Notes

For best results, simmer the sauce until thick enough to coat a spoon. Pipe the web right before baking. Let dough come to room temperature before shaping. Store dough and sauce in the fridge up to 2 days ahead.
