This quick and easy dessert comes together in under 30 minutes and is guaranteed to be a crowd-pleaser.

  • ½ cup (1 stick or 113g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (96g) all-purpose flour, spooned and leveled
  • ¼ cup (24g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ¾ cup (135g) semi-sweet chocolate chips, divided
  • 2 cups (about 120g) mini marshmallows
  • 45 sheets graham crackers, crushed (about ½ cup)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet in the oven while it preheats.
  2. In a large microwave-safe bowl, melt the ½ cup of butter in 30-second intervals, stirring between each, until fully melted. Let it cool for about 2 minutes.
  3. Whisk the granulated sugar into the melted butter until well combined and slightly glossy, about 1 minute.
  4. Add the eggs and vanilla extract. Whisk vigorously for about 1 minute until the mixture is smooth, glossy, and slightly thickened.
  5. In a separate small bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  6. Add the dry ingredients to the wet mixture and fold together with a rubber spatula just until no white streaks remain (about 15-20 strokes). Do not overmix.
  7. Reserve about ¼ cup of the chocolate chips for the top, then fold the remaining ½ cup into the batter.
  8. Carefully remove the hot skillet from the oven using oven mitts. Spray it lightly with non-stick cooking spray or brush with melted butter.
  9. Scrape the batter into the hot skillet and spread it evenly with a spatula.
  10. Sprinkle the reserved ¼ cup of chocolate chips over the top. Scatter the mini marshmallows evenly across the surface, leaving a little space between each. Sprinkle the crushed graham crackers over everything.
  11. Bake for 18 to 22 minutes. At 18 minutes, check—the edges should be set and the center should still be slightly jiggly. For a more toasted marshmallow top, switch the oven to broil for the last 1-2 minutes, watching closely.
  12. Remove from the oven and let cool on a wire rack for at least 10 minutes before serving.

Preheating the skillet gives you crispy edges. Don’t overbake—pull when center is slightly jiggly. Watch marshmallows closely under broiler. Let rest 10 minutes before serving for best texture.
