An easy, no-cook meat and cheese board perfect for game day or any gathering. Featuring a balanced mix of cured meats, artisan cheeses, and accompaniments, this crowd-pleasing appetizer comes together in under 20 minutes.

  • 8 oz soppressata, thinly sliced
  • 6 oz prosciutto, torn into ribbons
  • 6 oz genoa salami, thinly sliced
  • 4 oz capicola, thinly sliced (optional)
  • 6 oz aged gouda, sliced into wedges
  • 6 oz sharp cheddar, cut into cubes
  • 6 oz brie, left whole or halved
  • 4 oz blue cheese, crumbled or in small wedges
  • 1/2 cup marinated olives (mixed green and kalamata)
  • 1/2 cup cornichons or small pickles
  • 1/4 cup honey
  • 1/4 cup whole grain mustard
  • 1 cup mixed nuts (almonds, walnuts, or pecans, toasted)
  • 1 cup dried apricots or figs
  • 1 bunch red grapes, washed and separated
  • 1 baguette, sliced diagonally and toasted
  • 1 box water crackers or pita chips
  • Olive oil, for brushing baguette
  • Salt, to taste
  • Fresh black pepper, to taste
  • Flaky sea salt, for garnish

Instructions

  1. Preheat oven to 375°F. Slice baguette diagonally into 1/2-inch thick pieces. Arrange on a baking sheet in a single layer. Brush lightly with olive oil and sprinkle with a pinch of salt. Bake for 8-10 minutes until golden and crisp. Let cool completely.
  2. Take prosciutto and gently tear into 2-inch ribbons. Fold soppressata and salami slices into loose rolls or quarter them. Arrange meats in small piles on one side of the board, leaving space between each type.
  3. Cut aged gouda into thin wedges or small cubes. Cut sharp cheddar into 1-inch cubes. Leave brie whole or cut into halves. Crumble blue cheese or leave as a wedge. Place each cheese in a different section of the board, spacing them out evenly.
  4. Spoon olives and cornichons into small bowls. Place bowls on the board between meats and cheeses. Drizzle honey into a small dish and set mustard in another. Scatter nuts and dried fruit in empty spaces. Arrange grapes in small clusters around the board.
  5. Pile toasted baguette slices and crackers in a basket or on the edge of the board. Fan them out in a single layer if space allows.
  6. Drizzle honey over brie and gouda. Crack fresh black pepper over blue cheese. Sprinkle flaky sea salt on nuts. Serve immediately or within an hour.

Notes

Bring cheese to room temperature 30 minutes before assembling for best flavor. Don’t overcrowd the board; leave breathing room between components. Prep ahead by slicing cheeses and toasting bread the night before. For a vegetarian version, skip meats and double up on cheeses, nuts, and roasted vegetables. Leftovers can be stored separately in airtight containers for 3-4 days.
