A quick and refreshing summer drink made with fresh watermelon, mint, lime, and a touch of sweetener. Perfect for staying cool and hydrated on hot days.

Ingredients

Scale
  • 6 cups seedless watermelon, cubed and chilled
  • 1015 large fresh mint leaves, gently bruised
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 12 tablespoons honey or agave syrup (optional, adjust to taste)
  • 1 to 1 ½ cups cold water
  • Ice cubes, as needed

Instructions

  1. Cut about 6 cups (900g) of seedless watermelon into cubes and chill in the fridge for at least an hour.
  2. Add the watermelon cubes and 1 to 1 ½ cups (240-360ml) of cold water to a blender. Blend on high for 30-45 seconds until smooth but still pulpy.
  3. Gently bruise 10-15 fresh mint leaves with a muddler or the back of a spoon. Add mint, 2 tablespoons (30ml) fresh lime juice, and 1-2 tablespoons (15-30ml) honey or sweetener to the blender. Blend for 10-15 seconds to combine.
  4. Optional: Strain the mixture through a fine mesh sieve into a large pitcher for a smoother drink, pressing the pulp to extract juice. Otherwise, pour directly for fuller texture.
  5. Taste and adjust sweetness or lime juice as needed. Stir well and refrigerate for at least 30 minutes to chill and meld flavors.
  6. Serve over ice cubes, garnished with a mint sprig or a small wedge of watermelon.

Notes

Use ripe watermelon for best sweetness. Gently bruise mint leaves instead of chopping to avoid bitterness. Adjust sweetener based on watermelon sweetness. Chill ingredients to reduce need for excess ice. Straining is optional depending on texture preference.
