Instructions

  1. Cut watermelon into 1-inch bite-sized cubes using a sharp knife.
  2. Rinse and pat dry fresh mint leaves, then chop finely.
  3. Thinly slice red onion if using; soak in cold water for 10 minutes for milder flavor, then drain.
  4. In a small jar or bowl, combine lime juice, honey, olive oil, salt, and black pepper. Shake or whisk vigorously until emulsified.
  5. In a large mixing bowl, combine watermelon cubes, crumbled feta, chopped mint, and sliced red onion.
  6. Pour the honey-lime dressing over the salad.
  7. Gently toss with a wooden spoon or salad tongs to coat evenly without breaking the watermelon cubes.
