  • 1 large English cucumber, sliced thinly or cut into half-moons
  • 1 cup feta cheese, crumbled

  • 2 teaspoons Tajin seasoning
  • Juice of 2 limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup (optional)
  • Salt and pepper to taste

Instructions

  1. Cut watermelon into bite-sized cubes (about 4 cups) and place in a large mixing bowl.
  2. Peel cucumber if skin is thick or waxed; slice into thin rounds or half-moons about 1/4-inch thick and add to the bowl.
  3. In a small bowl, whisk together lime juice, olive oil, Tajin seasoning, and honey or agave syrup. Adjust sweetness if needed.
  4. Pour the vinaigrette over the watermelon and cucumber and gently toss to coat evenly without mashing the watermelon.
  5. Sprinkle crumbled feta cheese and chopped fresh mint over the salad and toss lightly to distribute.
  6. Season with salt and freshly ground black pepper to taste, keeping in mind feta’s saltiness.
  7. Chill the salad in the refrigerator for 10 to 15 minutes before serving to let flavors meld.
