Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into 1/2-inch thick slices. Arrange on a baking sheet and brush lightly with 1 tablespoon of extra virgin olive oil. Toast in the oven for 8-10 minutes or until golden and crispy. Alternatively, grill the slices for a smoky flavor.
  2. In a medium bowl, combine diced heirloom tomatoes, fresh blueberries, and torn mozzarella pieces. Add sliced basil, 2 tablespoons of olive oil, and season with salt and freshly ground black pepper to taste. Gently toss to combine without crushing the berries or mozzarella.
