Fresh Paleo Grilled Shrimp Skewers Easy Recipe with Zesty Chimichurri Sauce

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil (extra virgin)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • 1 cup fresh parsley leaves, packed
  • 1/2 cup fresh cilantro leaves (optional)
  • 3 garlic cloves, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 small shallot, finely chopped
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon fresh lime juice
  • Salt to taste (start with 1/2 teaspoon and adjust)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Toss shrimp in a bowl with olive oil, smoked paprika, salt, and pepper. Mix well and marinate for 10–15 minutes.
  2. In a food processor, combine parsley, cilantro, garlic, shallot, red wine vinegar, olive oil, red pepper flakes, and lime juice. Pulse until slightly chunky and vibrant green. Adjust salt and acidity to taste. Set aside.
  3. Thread 4 to 5 shrimp onto each skewer, piercing near tail and head for stability. Avoid overcrowding.
  4. Preheat grill or grill pan over medium-high heat.
  5. Grill shrimp skewers for 2-3 minutes on one side until pink edges and grill marks appear, then flip and cook for another 2 minutes. Avoid overcooking.
  6. Remove skewers from grill and immediately brush or drizzle generously with chimichurri sauce. Serve with extra sauce on the side.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate shrimp for no longer than 15 minutes to avoid mushy texture. If no grill is available, broil shrimp skewers in the oven for 4-5 minutes, flipping halfway through. Make chimichurri at least 15 minutes ahead to let flavors meld. Adjust red pepper flakes to control spiciness.
