Fresh Everything Bagel Cucumber Bites with Whipped Feta

A quick and easy party appetizer featuring crisp cucumber slices topped with creamy whipped feta and everything bagel seasoning, perfect for last-minute gatherings.

  • 1 medium cucumber, sliced into ½-inch rounds
  • 6 ounces feta cheese, crumbled
  • ¼ cup Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons everything bagel seasoning
  • 1 tablespoon fresh dill or chives, finely chopped (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional)

Instructions

  1. Wash and dry the cucumber well. Slice into ½-inch thick rounds and set aside on a platter.
  2. In a mixing bowl, crumble the feta cheese. Add Greek yogurt, lemon juice, and olive oil.
  3. Whip the mixture using an electric mixer on medium speed for 2–3 minutes until light and fluffy. If whipping by hand, whisk vigorously for about 5 minutes.
  4. Stir in sea salt (if using), freshly ground black pepper, and chopped dill or chives gently to incorporate.
  5. Spread about 1 teaspoon of whipped feta onto each cucumber slice using a spoon or small offset spatula.
  6. Sprinkle about ¼ teaspoon of everything bagel seasoning over each topped cucumber slice.
  7. Place the assembled bites in the refrigerator for 15–20 minutes to chill and let flavors meld.
  8. Arrange on a serving platter and serve chilled or at room temperature.

Notes

If whipped feta is too thick, add an extra tablespoon of Greek yogurt or olive oil to loosen. Pat cucumber slices dry to prevent sogginess. Whip feta thoroughly for best texture. Store leftovers in an airtight container in the fridge for up to 24 hours; best served fresh.
