  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/2 cup (120 ml) vodka
  • Pop Rocks candy (about 1/2 cup or 85 g, cherry or watermelon flavor preferred)
  • 2 tablespoons (30 ml) light corn syrup or honey
  • Optional garnishes: fresh mint leaves, sliced fresh strawberries or cherries

Instructions

  1. Pour 1 cup (240 ml) boiling water into a heatproof bowl. Add the gelatin package and whisk vigorously until completely dissolved.
  2. Stir in 1/2 cup (120 ml) cold water and 1/2 cup (120 ml) vodka. Mix thoroughly.
  3. Using a small brush or spoon, coat the rim of each jello shot cup with a thin layer of corn syrup or honey.
  4. Immediately dip the sticky rim into a shallow dish of Pop Rocks, twisting gently to cover evenly. Set cups aside on a tray without touching rims again.
  5. Carefully ladle or pour the gelatin mixture into each prepared cup, filling about 3/4 full without disturbing the Pop Rocks rim.
  6. Refrigerate the tray of shots for at least 4 hours or overnight until fully set.
  7. Serve chilled, optionally garnished with fresh mint or a small fruit slice.

Notes

Use boiling water to fully dissolve gelatin for best texture. Dry rims before applying syrup to help Pop Rocks stick. Chill shots at least 4 hours or overnight for best set. Avoid overpouring to protect Pop Rocks rim. For non-alcoholic version, replace vodka with sparkling water or lemon-lime soda. Reduce gelatin to 2.5 oz if shots are too firm. Cover shots loosely in fridge to avoid odors.
