Easy Veggie-Packed Muffin Tin Frittatas

A quick and easy make-ahead breakfast featuring fluffy eggs, fresh veggies, and melty cheese baked in muffin tins for perfectly portioned bites.

  • 8 large eggs
  • ½ cup (120 ml) milk or cream (dairy or plant-based like almond or oat)
  • 1½ cups (225 g) mixed vegetables, chopped (bell peppers, spinach, cherry tomatoes, mushrooms, or zucchini)
  • ½ cup (75 g) onion, finely diced
  • 1 clove garlic, minced
  • ¾ cup (85 g) shredded cheese (cheddar, mozzarella, feta, or a blend)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 2 tablespoons fresh herbs (optional, chopped parsley, basil, or chives)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil or butter in a medium non-stick skillet over medium heat. Add diced onion and garlic, sauté until fragrant and translucent.
  3. Add chopped mixed vegetables and cook until just tender but still slightly crisp. Set aside to cool slightly.
  4. In a large mixing bowl, whisk together eggs and milk or cream until smooth and slightly frothy.
  5. Add salt, black pepper, and fresh herbs to the egg mixture and stir gently to combine.
  6. Fold the sautéed vegetables and shredded cheese into the egg mixture evenly.
  7. Lightly grease each muffin cup with butter or oil, or use silicone liners to prevent sticking.
  8. Pour the egg and veggie mixture evenly into each muffin cup, filling about ¾ full.
  9. Bake for 18–22 minutes until frittatas are set and lightly golden on top. Test doneness with a toothpick; it should come out clean.
  10. Let the frittatas cool in the pan for 5 minutes before gently removing.
  11. Serve warm or cool completely and refrigerate for up to 4 days or freeze for longer storage.

Notes

Sauté vegetables before adding to egg mixture to avoid sogginess. Use room temperature eggs and dairy for even cooking. Do not overfill muffin cups to prevent overflow. For a golden top, broil for 1-2 minutes at the end, watching carefully.
