  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 pound sliced deli turkey
  • 1/4 cup mayonnaise (optional)
  • Salt and black pepper to taste
  • Optional add-ins: fresh spinach leaves, thinly sliced cucumber, roasted red peppers, or everything bagel seasoning

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 15 minutes before you start. If you forgot, unwrap it and microwave on low power for 10-15 seconds. It should be soft but not warm or runny.
  2. Mix the filling: In a small bowl, combine the softened cream cheese and shredded cheddar. Add a pinch of salt and a few grinds of black pepper. Mix until everything is well combined and smooth. If you’re using mayonnaise, stir it in now. Taste and adjust seasoning if needed.
  3. Prepare your work surface: Lay a tortilla flat on your cutting board. Use a rubber spatula to spread about 2-3 tablespoons of the cream cheese mixture evenly across the entire surface of the tortilla, going all the way to the edges.
  4. Layer the turkey: Place 2-3 slices of turkey on top of the cream cheese mixture, overlapping them slightly. Make sure the turkey covers the tortilla evenly, leaving about half an inch bare at the top edge. If adding optional ingredients, lay them on top of the turkey now.
  5. Roll it up tight: Starting at the edge closest to you, roll the tortilla away from you into a tight log. Use your fingers to keep the filling tucked in as you go. When you reach the end, press gently to seal.
  6. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends to secure. Repeat with the remaining tortillas. Place the wrapped rolls on a baking sheet or plate and refrigerate for at least 30 minutes.
  7. Slice and serve: After chilling, unwrap each roll and place it on your cutting board. Using a sharp knife, slice the roll into 1-inch thick pieces using a gentle sawing motion. Arrange the pinwheels on a serving platter and enjoy.

Let cream cheese come to room temperature for smooth spreading. Chilling for at least 30 minutes is crucial for clean slices. For best flavor, make a day ahead. Store in an airtight container in the fridge for up to 3 days. Do not freeze.
