Ingredients

Scale
  • 8 oz brie cheese wheel
  • ½ cup fig jam or preserves
  • 2 tbsp honey
  • 4 oz prosciutto, thinly sliced
  • 4 oz Genoa salami, thinly sliced
  • 4–6 fresh figs, halved
  • 1 green apple (Granny Smith), thinly sliced
  • ½ cup dried apricots
  • ½ cup pecans, toasted
  • 30–40 crackers (mix of water crackers, buttery rounds, seeded crisps)
  • 1 small baguette, sliced into ¼-inch rounds and toasted
  • ½ cup cornichons or pickled onions (optional)
  • Fresh rosemary sprigs (for garnish, optional)
  • ¼ cup pomegranate seeds (optional)

Instructions

  1. Prep your ingredients: Take brie out of fridge 30 minutes before starting. Slice baguette into ¼-inch rounds. Cut apple into thin slices and toss with lemon juice. Halve fresh figs if using. Slice salami into thin rounds. Toast pecans in dry skillet over medium heat for 3-4 minutes until fragrant.
  2. Place small bowls of fig jam and honey on opposite sides of a large wooden board or platter. Add pickled onions or cornichons in a third bowl if using.
  3. Place brie wheel in a prominent spot, near the fig jam. Optionally score top in crosshatch pattern and drizzle with honey.
  4. Fold prosciutto into loose ribbons and arrange in a cluster. Place salami rounds in a separate cluster, overlapping slightly.
  5. Scatter fresh fig halves and dried apricots around the board. Fan apple slices near the brie.
  6. Arrange crackers and toasted baguette slices in small groups. Sprinkle toasted pecans in empty spaces.
  7. Garnish with rosemary sprigs and pomegranate seeds. Drizzle extra honey over brie if desired. Serve immediately.

Notes

Let brie come to room temperature for best flavor. Toast pecans just before assembling for maximum crunch. For a vegan version, use plant-based brie, maple syrup instead of honey, and add roasted vegetables. Store leftovers separately: wrap brie in wax paper, keep crackers airtight, and refrigerate fruits and meats.
