  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional, for heat)
  • 1 cup chicken broth (low-sodium preferred)
  • 2 tablespoons apple cider vinegar
  • 2 bay leaves
  • 1 large bag tortilla chips (restaurant-style recommended)
  • 2 cups shredded cheese (mix of Monterey Jack and sharp cheddar)
  • 1 cup sour cream
  • 1 cup pico de gallo or salsa
  • 1 avocado, diced
  • ½ cup pickled jalapeños
  • ½ cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional toppings: black beans, corn, diced red onion, hot sauce, queso fresco

Instructions

  1. Marinate the pork (optional but recommended): The night before, trim any large pieces of fat from the pork shoulder. In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, black pepper, and cayenne. Rub this mixture all over the pork. Wrap tightly in plastic wrap and refrigerate overnight.
  2. Start the slow cooker: In the morning, place the pork shoulder in the slow cooker. Pour the chicken broth and apple cider vinegar around the meat (not directly on top). Add the bay leaves. Cover and cook on LOW for 8-10 hours, or on HIGH for 5-6 hours, until fall-apart tender.
  3. Shred the pork: Carefully transfer the cooked pork to a large cutting board or bowl. Reserve about 1 cup of the cooking liquid. Using two forks, shred the meat, discarding any large pieces of fat. Discard the bay leaves. Pour some of the reserved liquid over the shredded pork to keep it moist (start with ¼ cup and add more as needed).
  4. Crisp the pork (optional but amazing): For extra texture, spread the shredded pork on a sheet pan and broil for 3-5 minutes until the edges get crispy.
  5. Assemble the nachos: Preheat oven to 375°F. Spread a layer of tortilla chips on a large sheet pan. Top with half the pulled pork and half the shredded cheese. Add another layer of chips, the remaining pork, and the remaining cheese. Bake for 8-10 minutes, until the cheese is melted and bubbly.
  6. Add fresh toppings: Remove from oven and immediately top with dollops of sour cream, pico de gallo, diced avocado, pickled jalapeños, and a generous sprinkle of fresh cilantro. Squeeze lime wedges over everything. Serve hot.

For best flavor, marinate the pork overnight. Don’t skip the overnight rub—it makes a huge difference. Trim most of the fat cap but leave a thin layer to keep the meat moist. Layer the nachos to ensure every chip gets toppings. Use a rimmed baking sheet to catch drips. Toast the cumin and chili powder in a dry skillet for 30 seconds before mixing the rub for deeper flavor.
