  • 3 pounds (1.4 kg) apples (mix of sweet and tart, like Honeycrisp, Fuji, and Granny Smith)
  • 1 cup (200g) granulated sugar
  • ½ cup (100g, packed) light brown sugar
  • 2 tablespoons (16g) ground cinnamon
  • ½ teaspoon (1g) ground nutmeg
  • ¼ teaspoon (0.5g) ground cloves
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon (1.5g) salt
  • 1 tablespoon (15ml) lemon juice

Instructions

  1. Wash, core, and cut apples into 1-inch chunks. Leave peels on for color and fiber.
  2. Place apples, both sugars, cinnamon, nutmeg, cloves, vanilla, salt, and lemon juice in a 4-6 quart slow cooker. Stir to coat.
  3. Cook on low for 8 to 10 hours. Do not open the lid for the first 6 hours.
  4. After 8 hours, check if apples are very soft and the mixture is dark and jammy. If still chunky, cook 1-2 more hours.
  5. Optional: Use an immersion blender to blend until smooth, or leave chunky.
  6. Optional: Cook uncovered on low for 1-2 more hours to thicken, stirring occasionally.
  7. Cool completely in the slow cooker, then transfer to clean mason jars, leaving ½ inch headspace. Refrigerate.

Notes

For a smoother butter, peel the apples. To can for shelf-stable storage, process jars in a water bath for 10 minutes. The apple butter tastes even better the next day.
