This slow cooker chili cheese dip is thick, creamy, and perfectly spiced, with a restaurant-quality finish that stays warm for hours. It’s the ultimate crowd-pleaser for game day, potlucks, or any gathering.

  • 1 can (15 ounces) chili with beans
  • 8 ounces cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 packet (1 ounce) taco seasoning
  • 1/4 cup pickled jalapeños, chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup milk

Instructions

  1. Take cream cheese out of fridge 30 minutes before starting to soften. Cut into cubes if needed.
  2. Spray inside of slow cooker with non-stick cooking spray. Place softened cream cheese cubes at the bottom.
  3. Pour entire can of chili over cream cheese. Do not stir.
  4. Sprinkle taco seasoning, garlic powder, and onion powder over chili. Add jalapeños if using.
  5. Sprinkle both shredded cheeses evenly over the top. Do not stir.
  6. Cover and cook on low for 2 hours. After 1 hour, gently stir to incorporate cream cheese.
  7. After 2 hours, stir in sour cream. If too thick, add milk a tablespoon at a time until desired consistency.
  8. Stir well until smooth and creamy. Switch slow cooker to warm setting and serve.

Notes

Shred your own cheese for the smoothest melt. Layer ingredients instead of mixing for best texture. Do not overcook; switch to warm once melted. For a spicier version, use hot chili or add cayenne. Leftovers keep in fridge for up to 4 days; reheat in slow cooker or microwave.
