These quick pumpkin spice witches’ hat cookies are everything you want in a Halloween treat: easy, delicious, and just the right amount of spooky. They come together in under 30 minutes, using simple ingredients like sugar cookie dough and Hershey’s Kisses, and look like you spent hours on them.

Ingredients

Scale
  • 1 package (16.5 oz) refrigerated sugar cookie dough
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup all-purpose flour (for dusting)
  • 24 Hershey’s Kisses, unwrapped
  • 1/4 cup orange frosting (store-bought or homemade)
  • Green or black decorating gel (optional, for buckle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a small bowl, combine the refrigerated sugar cookie dough with the pumpkin pie spice. Use your hands to knead the spice evenly into the dough until uniform.
  3. Lightly dust your work surface and hands with the all-purpose flour. Pinch off pieces of dough and roll them into 1-inch balls. You should get about 24 balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  4. Bake for 10-12 minutes, or until the edges are just barely golden. The centers should still look slightly underdone.
  5. As soon as the cookies come out of the oven, gently press a Hershey’s Kiss into the center of each one. Press just until the base of the kiss is level with the cookie surface.
  6. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  7. Once the cookies are completely cool, use a piping bag or zip-top bag to pipe a small ring of orange frosting around the base of each chocolate kiss to create the ‘brim’ of the witches’ hat. Optionally, add a tiny dot of green or black decorating gel on top of the kiss to look like a buckle.
  8. Allow the frosting to set for about 10-15 minutes before serving or storing.

Notes

For best results, don’t skip the parchment paper. Press the Hershey’s Kiss into the cookie while it’s still hot from the oven, but don’t press too hard or it may crack. Start checking cookies at the 10-minute mark to avoid overbaking. If dough is too sticky, chill for 15 minutes before rolling. These cookies taste even better the next day as the flavors meld.
