This easy pumpkin spice cold brew concentrate is the simplest way to enjoy fall flavors in your coffee. No stove, no syrup, just great coffee and spices steeped together in the fridge for a perfectly balanced, budget-friendly concentrate.

  • 1 cup coarse ground coffee (medium roast recommended)
  • 4 cups cold, filtered water
  • 2 tablespoons pumpkin pie spice blend (store-bought or homemade)
  • 1 teaspoon vanilla extract (pure)
  • Pinch of fine sea salt
  • For the homemade pumpkin pie spice blend (optional): 2 tablespoons ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground nutmeg, 1 teaspoon ground allspice, ½ teaspoon ground cloves

Instructions

  1. Combine the coffee and spices: In a large glass jar, add the coarse ground coffee and pumpkin pie spice blend. Stir to distribute the spices evenly through the grounds.
  2. Add the vanilla and salt: Pour in the vanilla extract and add the pinch of salt. Stir to combine.
  3. Pour in the water: Slowly pour the cold filtered water over the coffee-spice mixture. Stir until all grounds are fully saturated.
  4. Cover and steep: Cover the jar and place it in the refrigerator. Let it steep for 12 to 24 hours (18 hours is ideal).
  5. Strain the concentrate: After steeping, place a fine-mesh strainer over a large bowl or clean pitcher. Pour the cold brew mixture through the strainer. Let it drain naturally without pressing on the grounds.
  6. Double strain for clarity: For the cleanest concentrate, line the strainer with a coffee filter or paper towel and strain the liquid a second time.
  7. Store and enjoy: Transfer the finished concentrate to airtight storage bottles. It will keep in the refrigerator for up to two weeks.

Notes

For best results, use coarse ground coffee and steep in the refrigerator for 18 hours. The salt rounds out flavors and reduces bitterness. The concentrate can be frozen in ice cube trays for later use. The flavor improves after the first day.
