  • 8 oz cream cheese, softened
  • 1 tablespoon sour cream
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh dill, finely chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup finely chopped red bell pepper
  • 1 cup finely chopped cucumber, seeds removed
  • ½ cup finely chopped green onions or chives
  • ½ cup shredded sharp white cheddar cheese
  • Fresh parsley or cilantro leaves, chopped (optional garnish)
  • Blueberries or small edible flowers (optional garnish)

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese and sour cream. Add garlic powder, fresh dill, salt, and pepper. Whip together with a spatula or electric mixer until smooth and creamy, about 2-3 minutes. If cream cheese isn’t soft enough, microwave for 10 seconds to help.
  2. Finely dice the red bell pepper, cucumber (removing seeds), and green onions. Shred the white cheddar cheese.
  3. Lay one tortilla flat on a clean surface. Spread an even, thin layer of the cream cheese mixture over the entire surface, leaving about a ½-inch border around the edges.
  4. Evenly sprinkle the chopped veggies and shredded cheddar over the cream cheese layer.
  5. Starting from one edge, carefully roll the tortilla tightly but without squeezing too hard. Wrap the roll tightly in plastic wrap. Repeat with remaining tortillas.
  6. Refrigerate the wrapped rolls for at least 15 minutes (up to 1 hour) to firm up the filling.
  7. Remove the plastic wrap. Using a sharp serrated knife, slice each roll into ½-inch thick pinwheels. Arrange on a platter, garnish with fresh parsley or blueberries if desired, and serve chilled or at room temperature.

Notes

Soften cream cheese properly for easy spreading. Pat veggies dry to avoid soggy tortillas. Chill rolled tortillas wrapped tightly for at least 15 minutes before slicing to keep pinwheels neat. Use a sharp serrated knife and wipe blade between cuts for clean slices. Can be assembled a few hours ahead and refrigerated.
