  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon red pepper flakes (optional)
  • 2 cups broccoli florets
  • 1 cup baby carrots
  • 1 red bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • ½ cup cherry tomatoes

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and paprika.
  3. In a small bowl, combine melted butter, minced garlic, olive oil, dried thyme, dried rosemary, and red pepper flakes (if using). Set aside about 2 tablespoons of the mixture for the vegetables.
  4. Place seasoned chicken breasts in the center of the prepared baking sheet, leaving space between each piece. Arrange broccoli, carrots, bell pepper, zucchini, and cherry tomatoes around the chicken in a single layer.
  5. Brush the garlic butter mixture generously over each chicken breast. Drizzle the reserved 2 tablespoons over the vegetables and toss gently to coat. Sprinkle everything with additional salt and pepper.
  6. Roast for 20 minutes. Remove the pan, stir the vegetables, and return to the oven for another 10-15 minutes, until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender and lightly browned.
  7. Remove from oven and let chicken rest for 5 minutes. Spoon pan juices over chicken and vegetables before serving.

Notes

For best results, use high-quality European butter like Kerrygold. Cut vegetables to similar sizes for even cooking. If using denser vegetables like potatoes, par-roast them for 10 minutes before adding chicken. For extra color, broil for the last 2 minutes, watching carefully to avoid burning.
