  • ½ cup (130g) creamy peanut butter
  • ⅓ cup (110g) honey
  • ¼ cup (45g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add rolled oats, ground flaxseed, and a pinch of sea salt. Stir together until evenly distributed.
  2. Add the wet ingredients: Spoon in peanut butter, honey, and vanilla extract. Distribute them a little to make mixing easier.
  3. Mix thoroughly: Stir with firm, steady strokes until the mixture forms a cohesive, slightly sticky dough. If too dry, add a teaspoon of honey; if too wet, add a tablespoon of oats.
  4. Fold in the chocolate chips: Add mini chocolate chips and fold gently until evenly distributed.
  5. Chill the mixture: Cover the bowl and refrigerate for 15-20 minutes to firm up the mixture.
  6. Roll into bites: Line a baking sheet with parchment paper. Using a 1.5-tablespoon cookie scoop or tablespoon, scoop portions and roll into smooth balls. Wet hands slightly if sticky. Makes about 16-18 bites.
  7. Set and serve: Place rolled bites on the prepared baking sheet and refrigerate for at least 30 minutes to firm up completely. Serve cold.

Notes

Don’t skip the chill time—it firms up the mixture for easier rolling. Use room-temperature ingredients for easier mixing. Wet your hands slightly to prevent sticking when rolling. For extra flavor, toast the oats at 350°F (175°C) for 8-10 minutes before mixing. The bites get better after a day in the fridge as flavors meld.
