Quick and easy soft pretzel bites made from a happy accident, ready in under 30 minutes. Perfect for weeknights, game day, or a fun snack, served with a tangy three-ingredient mustard sauce.

  • 2 ¼ cups (280g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ¾ cup (180ml) warm water (about 110°F)
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ¼ cup (60g) baking soda
  • 6 cups (1.4 liters) water for boiling
  • Coarse salt for sprinkling
  • ¼ cup (60g) Dijon mustard
  • 2 tablespoons (30ml) honey
  • ¼ cup (60g) mayonnaise

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk together the flour, instant yeast, sugar, and salt. Add the warm water and melted butter. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead for 3-4 minutes, until smooth and elastic. If too sticky, add a tablespoon of flour at a time; if too dry, add a teaspoon of water.
  4. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 12 inches long and ½ inch thick. Cut each rope into 1-inch pieces (about 8-10 pieces per rope, around 36 total).
  5. In a large pot, bring 6 cups of water to a rolling boil. Carefully add the baking soda (it will bubble up). Stir until dissolved.
  6. Working in batches of 6-8 pieces, drop the pretzel bites into the boiling water. Boil for 20-25 seconds. Use a slotted spoon to transfer to the prepared baking sheet, spacing them about 1 inch apart.
  7. While still wet from the bath, sprinkle generously with coarse salt.
  8. Bake for 10-12 minutes, until deep golden brown. Rotate the pan halfway through.
  9. While still warm, brush with melted butter.
  10. While the pretzels bake, whisk together Dijon mustard, honey, and mayonnaise in a small bowl. Adjust to taste.
  11. Serve warm with the mustard sauce on the side.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature crust. Boil for exactly 20-25 seconds to avoid tough skin. For best texture, serve within 15 minutes of baking. Leftovers can be stored in an airtight container at room temperature for up to 2 days; reheat in a 350°F oven for 3-4 minutes.
