A quick and easy iced pumpkin chai latte made with real pumpkin puree, oat milk, and chai tea. This creamy, dairy-free fall drink comes together in minutes with simple pantry ingredients.

  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon maple syrup (or honey, agave)
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • Pinch of fine sea salt
  • 2 chai tea bags (e.g., Tazo or Stash)
  • ½ cup hot water (just off the boil)
  • 1 cup unsweetened oat milk (barista blend preferred)
  • 1 cup ice cubes
  • For garnish: pumpkin pie spice or cinnamon, maple syrup drizzle, whipped cream (optional)

Instructions

  1. Steep the Chai: Boil ½ cup water. Pour into a small bowl or liquid measuring cup, add 2 chai tea bags, and steep for 5 minutes.
  2. Make the Pumpkin Spice Base: In a mason jar or cocktail shaker, combine pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Shake vigorously for 30 seconds until smooth.
  3. Combine and Shake: Remove tea bags (do not squeeze). Pour hot chai into the jar with the pumpkin base. Add oat milk. Secure lid and shake for 15-20 seconds until frothy and uniform.
  4. Assemble the Drink: Fill a tall glass with ice cubes. Pour the shaken mixture over the ice.
  5. Garnish and Serve: Stir gently. Sprinkle with pumpkin pie spice or cinnamon. Add whipped cream and maple syrup drizzle if desired. Serve immediately.

Notes

For a stronger chai flavor, steep tea bags for 7-8 minutes. To make ahead, steep chai the night before and refrigerate. Use barista blend oat milk for best creaminess. Do not use pumpkin pie filling.
